Shredded Chicken Tacos with Creamy Chimichurri Sauce

Ingredients
  

  • 1 lb boneless skinless chicken breasts, cooked and shredded
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Your favorite taco toppings e.g., diced onion, shredded lettuce, tomatoes, cheese, salsa
  • For the Chimichurri Sauce:
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic minced
  • 2 tbsp vinegar
  • Salt and pepper to taste

Instructions
 

  • In a bowl, combine Greek yogurt, mayonnaise, parsley, cilantro, garlic, and vinegar. Season with salt and pepper to taste. Mix well.
  • Heat olive oil in a skillet over medium heat. Add shredded chicken and cook until heated through. Season with salt and pepper.
  • Warm tortillas according to package directions. Place shredded chicken on each tortilla. Top with chimichurri sauce and your favorite taco toppings.
  • Serve immediately and enjoy!

Notes

You can use rotisserie chicken for convenience.
Adjust the amount of garlic and vinegar to your taste.
For a spicier sauce, add a pinch of red pepper flakes.
