Ingredients
  

  • 8 ounces rice noodles
  • 1 block extra-firm tofu cubed
  • 1 carrot shredded
  • ½ onion thinly sliced
  • 1 avocado sliced
  • Mixed lettuce greens
  • 2 tablespoons peanut butter smooth or chunky
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha adjust to taste
  • 1 teaspoon maple syrup
  • ½ teaspoon sesame oil

Instructions
 

  • Cook rice noodles according to package directions. Drain and set aside.
  • Heat a skillet over medium heat with a little oil. Cook tofu until golden brown on all sides.
  • In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, Sriracha, maple syrup, and sesame oil until smooth.
  • Divide cooked noodles, tofu, carrot, onion, and avocado between bowls. Top with mixed lettuce greens.
  • Drizzle each bowl generously with peanut sauce.
  • Garnish with chopped peanuts or sesame seeds, if desired. Serve immediately.
