- Eggs - 4
- Onions - 1 medium finely chopped
- Tomatoes - 1 medium finely chopped
- Green Chili - 1-2 finely chopped
- Ginger & Garlic Paste - 1 tsp
- Oil - 2 tbsp
Spices
- Coriander Powder - 1 tsp
- Cumin Powder - ½ tsp
- Turmeric Powder - ¼ tsp
- Red Chili Powder - ¼ tsp
- Black Pepper - ¼ tsp
- Salt - to taste
- Coriander Leaves - 2 tbsp chopped
Crack eggs into a bowl, whisk with salt and chopped coriander.
Heat oil in a pan, sauté onions until soft.
Add garlic paste and green chilies, cook until fragrant.
Add spices and tomatoes. Cook until tomatoes are soft.
Add whisked eggs and stir continuously until soft and fluffy.
Garnish with fresh coriander and serve hot.
For creamier eggs, reduce heat and cook slowly.
Pair with buttered toast or parathas.
