Ingredients
  

  • 4 chicken breasts
  • 1 teaspoon Italian seasoning
  • 1/2 cup roasted red peppers sliced
  • 1/4 cup fresh basil leaves
  • 4 ounces mozzarella cheese sliced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). Slice the roasted red peppers and mozzarella cheese into thin strips.
  • Lay the chicken breasts on a cutting board. Use a sharp knife to butterfly each breast, slicing horizontally to create a pocket.
  • Fill each chicken pocket with roasted red pepper slices, mozzarella cheese, and basil leaves. Secure the stuffed chicken with toothpicks to keep the filling in place.
  • Place the stuffed chicken in a baking dish. Bake for 25-30 minutes until the chicken is cooked through.
  • Let the chicken rest for 5 minutes before serving. Remove the toothpicks and enjoy!
