Ingredients
  

For the Chicken Meatballs

  • 1 pound ground chicken
  • 1/2 cup Italian bread crumbs
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese For the Chicken Meatballs

For the Sauce

  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes chopped

Instructions
 

  • In a large bowl, combine ground chicken, Italian bread crumbs, grated Parmesan cheese, Italian seasoning, and egg. Mix well until all ingredients are evenly combined.
  • Shape the mixture into meatballs, about 1-2 inches in diameter. Place the meatballs on a baking sheet lined with parchment paper.
  • Heat a large skillet over medium heat and add olive oil. Cook the meatballs in batches, turning them occasionally, until browned and cooked through, about 8-10 minutes.
  • In the same skillet, melt butter and sauté garlic until fragrant. Add heavy cream, grated Parmesan cheese, and sun-dried tomatoes. Simmer the sauce for 5-7 minutes until thickened.
  • Add the cooked meatballs to the sauce and toss to coat.
  • Serve the meatballs hot with the sauce spooned over them. Enjoy!
