For the Chicken Meatballs
- 1 lb ground chicken
- 1 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- 1 large egg
For the Sauces and Seasonings
- 2 tbsp butter
- 4 cloves garlic minced
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes chopped
In a large bowl, combine ground chicken, Italian bread crumbs, Parmesan cheese, Italian seasoning, and the egg. Mix thoroughly until all ingredients are well incorporated.
Shape the mixture into small meatballs, approximately 1-2 inches in diameter. Place the meatballs on a parchment-lined baking sheet.
Heat olive oil in a large skillet over medium heat. Working in batches, cook the meatballs, turning occasionally, until browned and cooked through, about 8-10 minutes.
In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes. Let the sauce simmer for 5-7 minutes until it thickens.
