Chicken Karahi Recipe (Authentic Indian Style)

- Chicken - 1 kg bone-in, thighs, or drumsticks
- Tomatoes - 4 medium finely chopped
- Ginger & Garlic Paste - 2 tbsp
- Green Chilies - 3-4 slit
- Whisked Yogurt - 1 cup
Spices
- Ground Cumin - ½ tsp
- Ground Coriander - ½ tsp
- Kashmiri Red Chili Powder - ½ tsp
- Regular Red Chili Powder - ½ tsp
- Black Pepper - ½ tsp
- Cooking Oil - 5 tbsp
- Salt - to taste
Garnish
- Ginger julienne
- Coriander Leaves chopped
Heat oil, add green chilies, and sauté. Add chicken, sprinkle salt, and cook for 7-8 minutes.
Stir in ginger-garlic paste. Cook for a minute, then add chopped tomatoes. Cover and cook until soft.
Add roughly ground spices and cook until oil separates.
Stir in whisked yogurt and cook on high heat to reduce moisture.
Garnish with julienne-cut ginger, coriander, and slit chilies. Cover, rest for 5 minutes, and serve.
For authentic taste, avoid adding water during cooking.
Use fresh, ripe tomatoes for better flavor.
