Ingredients
  

  • 1 pint fresh grape tomatoes halved
  • 12 cup fresh basil leaves finely chopped
  • 8 ounces mozzarella pearls or bocconcini
  • 8 ounces gluten-free pasta (penne or rotini)
  • 3/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey mustard
  • 2 garlic cloves minced
  • 3/4 tbsp sugar
  • 2 tbsp kosher salt
  • 1/2 tbsp black pepper

Instructions
 

  • In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey mustard, minced garlic, sugar, kosher salt, and black pepper until smooth.
  • Bring 4 quarts of water with 1 to 2 teaspoons of salt to a boil. Add the pasta and cook according to the package instructions (about 8-10 minutes). Drain and rinse with cold water.
  • In a large mixing bowl, combine the cooled pasta, halved grape tomatoes, mozzarella pearls, and chopped basil.
  • Pour the balsamic dressing over the pasta mixture. Gently toss until everything is evenly coated. Serve immediately or chill in the refrigerator until ready to serve.
