- 1 pint fresh grape tomatoes halved
- 12 cup fresh basil leaves finely chopped
- 8 ounces mozzarella pearls or bocconcini
- 8 ounces gluten-free pasta (penne or rotini)
- 3/4 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 2 tbsp honey mustard
- 2 garlic cloves minced
- 3/4 tbsp sugar
- 2 tbsp kosher salt
- 1/2 tbsp black pepper
In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey mustard, minced garlic, sugar, kosher salt, and black pepper until smooth.
Bring 4 quarts of water with 1 to 2 teaspoons of salt to a boil. Add the pasta and cook according to the package instructions (about 8-10 minutes). Drain and rinse with cold water.
In a large mixing bowl, combine the cooled pasta, halved grape tomatoes, mozzarella pearls, and chopped basil.
Pour the balsamic dressing over the pasta mixture. Gently toss until everything is evenly coated. Serve immediately or chill in the refrigerator until ready to serve.
