5 Ingredient Beef Enchiladas Recipe

Quick and easy, these beef enchiladas use just five key ingredients to create a bold, cheesy, and delicious Mexican-inspired dish perfect for any weeknight.

Ingredients
  

  • 1 lb ground beef
  • 1 can enchilada sauce 15 oz
  • 8 corn tortillas
  • 2 cups shredded cheese Monterey Jack, cheddar, or a blend
  • 1 small can diced green chiles optional

Instructions
 

  • Preheat to 375°F (190°C). Lightly grease a 13x9-inch baking dish.
  • In a skillet, brown the ground beef over medium-high heat. Stir in ½ cup enchilada sauce and diced green chiles. Remove from heat.
  • Spread ½ cup of enchilada sauce in the bottom of the baking dish. Spoon ¼ cup beef mixture onto each tortilla, sprinkle with 1 tbsp cheese, and roll tightly. Place seam-side down in the dish.
  • Pour the remaining enchilada sauce over the tortillas. Sprinkle the rest of the cheese on top.
  • Bake for 20-25 minutes until hot and bubbly. Let rest 5 minutes before serving.
